“un banco per la vendita diretta al ristorante, con guida dell’esperto all’acquisto. Poi ci si siede a tavola, si lamella a piacere e quel che resta del tartufo è tutto take away.”

La Terrazza Miravalle si prepara alla nuova stagione del bianco con grandi novità ed eventi speciali. In attesa dello show cooking che vedrà protagonista lo chef pluristellato Gianfranco Vissani, ospite del locale di San Miniato il prossimo 3 novembre, l’ultima innovazione nell’utilizzo del tartufo, proposta da Donato Galasso e Filippo Gemignani, è stata presentata venerdì sera (27 ottobre) in un’anteprima alla presenza di importanti blogger e instagramers toscani, che hanno raccontato live sui social la serata di degustazione e il nuovo menù autunnale del giovane e promettente chef Maurizio Barbara. Per tutta la stagione alla Terrazza si potrà acquistare il tartufo bianco, rigorosamente di zona, presso lo stand allestito all’interno del ristorante, per poi consumarlo a piacimento sui piatti proposti in menù.

L’alta cucina della Terrazza Miravalle, ristorante di recente apertura in piazza Duomo, con vista panoramica su tutto il Valdarno, è attenta alla tradizione e dà spazio alle nuove tecniche di cottura. Il km 0 si sceglie, se possibile, si predilige il biologico e il biodinamico, si cerca la qualità  delle materie prime e dell’olio extravergine di oliva amaro e piccante.

L’armonia e la bellezza delle terre toscane sono paesaggio che diventa sapore e aroma nelle diverse creazioni gastronomiche.

Maurizio Barbara, 35 anni, siciliano, è innamorato della Toscana, terra d’adozione in cucina. I sapori del Chianti sono stati un’ispirazione, fin da quando, solo per diletto, si divertiva ai fornelli per gli amici. Chef da 12 anni, Barbara ha collaborato con grandi professionisti italiani (Valeria Piccini, ristorante stellato da Caino) ed esteri (l’esperienza francese de La Fontaine aux Perles, stella Michelin) ed è stato alla guida di alcuni locali toscani, a Cerbaia, Montespertoli e San Miniato. Particolari, tra le proposte del menù autunnale, la terrina di fegatini al vin santo con pan brioche e composte di frutta; gli gnudi con ricotta e porcini; i tortelli di zucca, salsa di pecorino e nocciole tostate; il burger chic;  il capocollo di maiale cotto a bassa temperatura. Una sorpresa le dolcezze in carta per il dessert.
